The UK Chocolate Masters 2008
Six professional chocolate-craftsmen participated in the UK Chocolate Masters competition at the Restaurant Show on 6th October. In addition to creating a 'haute couture' sculpture form a mystery box of ingredients, each entrant was tasked with creating their own pralines and dessert, with the overall winner securing a place at the World Chocolate Masters final at Salon du Chocolat Professionnel in October 2009. Catering in Scotland finds out who's the master of chocolart…
There are fans of chocolate, there are chocolate-lovers and then, at the very furthest end of the scale, there are chocolate fanatics. Fans are people who appreciate a good quality bar on an infrequent basis; chocolate-lovers crave different types of the sweet, textured decadence on a regular basis. The fanatics, however, are in a different league. They live, love, breathe, work with and dream of it. Mark Tilling, pastry chef at the Lainston House Hotel in Winchester, is a fanatic. Having scooped the first prize for the second year running, Mark is now looking forward to competing with the best in the world, representing Great Britain at the World Chocolate Master Finals at the Salon du Chocolat in Paris in October 2009.
Oliver Drayton and Sebastian Kobelt followed overall in second and third place respectively, with each being awarded an individual prize for their own creations. Kobelt, of The Kitchin in Edinburgh, scooped the award for the 'People's Choice Praline, voted for by the public, while a jury of chocolatiers voted for Drayton and awarded him the 'Chocolatiers' Choice Praline.
The World Chocolate Masters was launched by Callebaut, Cacao Barry and Carma as a top level competition for chocolate craftsmen and women from all over the world, promoting the creative use of top quality chocolate in all its applications.

The title of 'World Chocolate Master 2009' will be handed to the contestant whom the judges believe has excelled in his or her respective categories.
The world finals will be held at Salon du Chocolat Professionnel from 14th-16th October 2009, at Paris Expo. For more information and a full list of contestants, visit www.worldchocolatemasters.com or www.callebaut.com
